Sodium nitrite (NaNO₂) is an inorganic salt that appears as a white to slightly yellow crystalline powder. It dissolves easily in water and absorbs moisture from the air. Nitrite is labeled as E250 (potassium nitrite is E249) and is approved in the European Union, United States, Australia, and New Zealand.
